We choose the coffee. You choose how you want it roasted and ground.
Discovery Coffee is built for drinkers who want variety, exploration and surprise. Instead of buying the same coffee repeatedly, you get small-lot, one-off coffees from our current inventory, roasted to your preferences. No two bags are guaranteed to be the same. That's exactly the point.
How It Works
Step 1: Choose Your Flavour Direction
Fruity & Bright → Vibrant, acidic, expressive. Stone fruits, florals, brightness.
Balanced & Smooth → Sweet, structured, easy-drinking. Honey, chocolate, body.
Rich & Chocolatey → Deeper, heavier, lower acidity. Chocolate, sweetness, rounded.
Step 2: Choose Your Roast Level
Two levels, and both are developed on the specific lot rather than pulled off a generic chart.
Light — dropped early and short, for maximum clarity and aromatic lift. Filter-leaning.
Medium — our house profile. More body, more sweetness, more balance. Works black, in milk and as espresso.
We do not roast darker than this. Pushing a specialty lot into a dark roast wastes what makes it worth buying.
Step 3: Choose Your Grind
Whole bean — if you own a grinder
Espresso — pressurised and non-pressurised baskets
Filter (pour over) — V60, Chemex, AeroPress, drip machines
Cafetière — coarse, for full immersion
Ground coffee gives up its aromatics faster than whole beans, so if you have a grinder at home, use it. If you do not, we would rather grind it properly for you than have you guess. No extra charge either way.
Step 4: We Deliver
A 250g bag selected from our current small-lot inventory, roasted to order and built around your preferences. Fresh, personalised, unique.
What You're Getting
This isn't a pre-roasted product with a fixed flavour. It's a service built around discovery and choice.
At any given time we have small-lot coffees, one-offs, limited microlots, experimental lots, or coffees we can't source at scale but are too good to ignore. Instead of sitting on inventory, we roast them to order based on your preferences.

How to Choose
If you love bright, expressive coffees: go Fruity & Bright with a Light roast. That combination gives you the cleanest, most aromatic cup we can produce, and it is at its best as pour over.
If you want something you can rely on: go Balanced & Smooth with a Medium roast. Good body, honeyed sweetness, and it holds up in milk. This is the most versatile combination on the page.
If you want deeper, chocolate-forward cups: go Rich & Chocolatey with a Medium roast. We will pick a lot with natural weight and lower acidity rather than roasting a delicate coffee into submission.

Discovery Coffee is built for exploration. It's for people who are curious, who want to keep learning, who get excited about trying something new each time they order. It's how we use lots that don't fit our permanent catalogue but are too special to waste.
Every bag tells a different story. And that's better than repeating the same story twice.
A Note on Variety
While each selection is roasted to match your flavour direction and roast level, the actual coffee will vary from order to order. You might get a natural one month and a washed lot the next, both fruity and bright, both roasted light. That variability is intentional. It's what makes discovery possible.
If you'd prefer consistency, choose one of our single origin coffees instead. Each one is roasted to order with full transparency about exactly what you're getting.
